Shiitake mushrooms have been used in Eastern countries since ancient times, discovering not only their excellent taste characteristics, but also their healing properties.
Vitamins and other biologically active substances found in shiitake mushrooms provide preventive protection against diseases. Special attention deserves the assessment of the nutritional properties of shiitake: mushrooms contain Zinc, ergosterol (a provitamin of vitamin D2, this substance is converted into vitamin D), polysaccharides, lysine, leucine and other essential amino acids for the normal existence of the body.
